Tips and Tricks for Corn Flake Chicken

Before you get started, you might want to know these helpful tips so your chicken turns out crispy every time!

When coating the chicken with crushed cornflakes, make sure to press the chicken firmly into the coating to ensure it adheres well. This will result in a more even and crispy crust.

Make sure to leave enough space between the chicken breasts on the baking sheet. Overcrowding can prevent the chicken from browning evenly and result in a soggy crust. Depending on the size of the chicken, you may need to use two pans.

Placing a wire rack on top of the baking sheet can help elevate the chicken and allow the hot air to circulate, resulting in an even crispier crust.

Expert tip: For an even golden-brown crust, flip the chicken breasts halfway through the cooking time. This will ensure both sides are evenly cooked and crispy.

Ingredients for Corn Flake Chicken

To make cornflake baked chicken, you need the following simple ingredients:

4 boneless, skinless chicken breasts

4 tablespoons butter, melted

5 cups cornflakes

1½ teaspoons dried parsley

½ teaspoon thyme

1 egg

1 cup milk

1 cup flour

½ teaspoon salt

¼ teaspoon fresh ground black pepper

How to make Cornflake Chicken

First, preheat oven to 375ºF. Prepare a 9 X 13-inch baking dish or large sheet pan with cooking spray.

Make the Cornflake Chicken Breading

Combine crushed cornflakes, parsley, and thyme in a large plastic bag. Make sure to crush the flakes until they are small crumbs. You can use a rolling pin or a food processor for this step.

(This is something I would have the kids do when they were little. They loved it and were able to help me with dinner.)  Transfer the cornflake mixture to a plate or shallow dish, if desired. I often keep the mixture in the bag and add the chicken after it been dipped in the egg mixture.

Combine egg and milk in a medium bowl and mix together. Whisk in flour, salt, and ground pepper.

Breading the Chicken

Place one boneless chicken breast in the egg mixture and cover completely.

Individually place chicken pieces in the cornflake coating, then turn to coat both sides of the chicken, pressing the the meat down into the cornflakes.

Baking the Chicken

Place in a baking dish in a single layer, then repeat with the remaining pieces. Using a spoon, drip melted butter evenly over the chicken.

Bake for 30 minutes or until golden brown and the internal temperature read on a meat thermometer reaches 165°F.

Once cooked, remove the chicken from the oven and let it rest for a few minutes before serving. This will allow the juices to redistribute, resulting in tender and juicy chicken!

FAQs

How to store leftover baked chicken

You can store leftover chicken breasts in an airtight container in the fridge for 1-2 days. The coating will get soggy as it absorbs juice from the chicken, so it’s best eaten freshly cooked.
