2 oz. Nearest Green Tennessee Whiskey1 oz. Matcha honey syrup*¾ oz. Fresh lemon juice6-8 mint leaves plus top of a mint sprig
Add the mint leaves (preserving the top of the sprig) to the small half of a cocktail tin.
Add the matcha honey syrup and gently press the mint into the syrup with a cocktail muddler, or another blunt object.
Add the fresh lemon juice and whiskey.
Add 5 ice cubes to the tin, seal with the other side and shake hard for 8-10 seconds.
Double strain (using a Hawthorne and fine mesh strainer) into a rocks glass over fresh ice.
Garnish with the top of a mint sprig. For added aromatics, gently tap the mint to the back of your hand before tucking it into the glass.
*For Matcha honey syrup
Combine 4 oz. of water with 1 tsp. matcha green tea powder in a small saucepan. Whisk or stir to combine, until all powder is dissolved. Gently heat the mixture on medium-low and add 6 oz. of honey, stirring until the honey is incorporated. Remove from heat and allow the syrup to cool. Make sure to mix the syrup before use as it is natural for the matcha powder to separate.
