This cocktail was inspired by the savory qualities of the anise and tarragon, lightened by lemon juice and chamomile and effervescent from the cava. The perfect segue from summer into fall or winter into spring when it’s “not too hot, not too cold, and all you need is a light jacket” – Miss Congeniality

1 ½ oz. Smoke Lab anise vodka
¼ oz. lemon juice
¼ oz. tarragon + green peppercorn syrup
½ oz. ginger beer (I use Fevertree)
¾ oz. chamomile tea
2 oz. cava
Build all ingredients in a wine glass, add ice, stir to incorporate.
Garnish with one sprig of tarragon.
The flavors of the saffron plays so well with the nuttiness of the sherry and the floral flavor of the elderflower liqueur. Grapefruit adds the acid and ties it all together.

1 oz. fresh white grapefruit juice.
1 oz. Smoke Lab saffron vodka.
1 oz. St. Germain elderflower liqueur.
1 oz. Lustau Amontillado Sherry.
Combine all ingredients in tin, shake, double-strain into a coupe glass.
Garnish with 3 dried jasmine buds or an expressed grapefruit twist.
