Welcome to my very first Vegetarian Meal Plan with an easy printable grocery list! This weekly meal plan is heavy on the protein and plants, and features easy, unfussy recipes to uncomplicate your weeknight dinners.
It’s flexible, too. If you’re looking for a fully vegan meal plan, it’s easy to make a couple of tweaks and get there. Or if you have a meat-eater in the house, it’s simple to add some carnivorous ingredients to their portions.
Monday: Slow Cooker Sweet Potato Peanut Stew
Tuesday: Taco Salad with Lentil-Walnut Taco Filling
Wednesday: Coconut Curried Green Lentils
Thursday: Rustic Roasted Winter Vegetable Soup
Friday: Quesadillas

Do your grocery shopping and prep the Sweet Potato Peanut Stew. Refrigerate overnight. Grocery note: If your avocados are ripe, be sure to put them in the fridge so that they won’t overripe before you get a chance to eat them.
Place Sweet Potato Peanut Stew in Crock Pot in the a.m. Cook brown rice, making enough to also warm up for Wednesday’s curried lentils.
Make the Lentil Walnut Taco Filling, bake your tortilla shells for your salad “bowls” (instructions found in my taco salads post) and assemble taco salads with taco filling, cheese, lettuce, olives, avocado, tomato, sour cream, and salsa. Store leftover taco filling in the fridge for Friday’s quesadillas.
Make Coconut Curried Green Lentils. Warm up leftover brown rice and buttered naan to serve alongside.
Make Roasted Winter Vegetable Soup. Serve with buttered warm naan or crusty bread (not on the grocery list).
Assemble quesadillas by lining half a tortilla with taco filling and topping with cheddar cheese. Cook them in a skillet or on a panini press, or you can fold them over and bake at 375°F for 15-20 minutes until warmed through and the tortillas are a bit crisped up. Serve with sour cream and salsa along with chopped avocado and tomato on the side.
