PDT’s Jeff Bell Creating Cocktails For Waldorf Astoria NY

Waldorf Astoria New York has enlisted Jeff Bell, managing partner of speakeasy Please Don’t Tell (PDT), to develop the cocktail program at the hotel’s iconic Peacock Alley Bar, as well as its signature restaurant Lex Yard.

Working with the food and beverage teams at Waldorf Astoria New York and parent company Hilton, Bell develop original offerings that build on classic New York cocktail culture and redefine the hotel bar, layering on modern service styles and interactive experiences. The hotel will offer an innovative all-day beverage program throughout Peacock Alley and Lex Yard, encompassing brunch-style cocktails, afternoon spritzes, pre-dinner drinks and evening cocktails, and more.

Waldorf Astoria New York, which opened on Park Avenue in 1931, been closed since 2017 for renovations and is scheduled to reopen this spring. The famous Peacock Alley bar, an extension of the hotel’s reception areas, has been restored to its original grandeur, incorporating landmarked design elements with modern touches.

In addition to Bell’s cocktails, the menu will feature original creations invented at Peacock Alley including Dr. Cook and Bishop Poker, as well as quintessential Prohibition-style cocktails and modernized versions of the classics. Lex Yard’s cocktail menu will feature classics such as the Rob Roy — which was originally created at the property — and a Rye Old Fashioned, as well as beverages made with seasonal ingredients sourced in partnership with the hotel’s culinary team.

PDT, which opened in New York in 2007, also operates a location in Hong Kong. Bell, also a partner with Apres Cru Hospitality, late last year collaborated with New York Cocktail Co. on a bottled, ready-to-serve premium Old Fashioned.
