Snobbery during wine service is a clear issue, but it’s something that can easily be avoided with a simple attitude adjustment. Just about every other problem with wine service, however, boils down to staff education.

We’re not saying that everyone working in a restaurant needs to have their WSET Level 4 Diploma. But most operators aren’t even taking the time to make sure that servers — not somms — are familiar with their restaurant’s wine list and any changes made to it on a day-to-day basis. The training doesn’t have to be extensive, but a simple crash course that gives servers the tools to briefly guide customers through the list is imperative.
