InchDairnie Distillery has released its first single malts: KinGlassie Double Matured and KinGlassie Raw.
They mark a bold step for the Fife-based outfit, which until now has been known chiefly for its experimental Scottish rye, RyeLaw.
These two whiskies aren’t just InchDairnie’s first single malts – they’re also likely the first peated whiskies from Fife in living memory.
KinGlassie Double Matured is peated to 50ppm using mainland Scottish peat. After five years in bourbon casks, it gets a three-year Amontillado sherry cask finish, adding a nutty depth to its smoky base. Almonds, tobacco, and a velvety texture all play their part.
KinGlassie Raw skips the finishing stage entirely. It was aged for the full eight years in American oak bourbon casks. It’s described as “untamed” with a hit like a smouldering fireplace and a complex malt core. Less polish, more punch.
Both releases offer a different approach to peat, but both showcase InchDairnie’s drive to do things differently.

InchDairnie’s take on smoke isn’t about brute force either. It’s layered, engineered, and run through an impressively modern setup that includes a hammer mill, mash conversion vessel, and unusual distillation tweaks designed to maximise flavour and eliminate sulphurous notes.
Beyond the smoke and the shiny new bottles, InchDairnie is also positioning itself as a distillery with a conscience. It’s working with the SWA and environmental groups to support peatland restoration, promoting responsible sourcing while still producing whisky that’ll set your eyebrows alight.
Founder Ian Palmer calls it a “landmark milestone” and suggests these releases are just the beginning of InchDairnie’s plan to upend expectations in Scotch whisky. If this is their opening salvo, then it’s fair to say they’ve come out swinging.
