New York-based craft distillery Sauvage Distillery just launched Upstate Brandy Maple. This small-batch spirit blends two-year-aged apple brandy with maple syrup sourced locally within Schoharie County, the same county where the distillery is located
Upstate Brandy Maple’s curation begins with the fermentation of juice from locally grown apples, which is then distilled to 160 proof. The resulting distillate is then aged for a minimum of two years in oak barrels (ex-bourbon and American oak), according to the distillery. The final touch to the brandy is the addition of maple syrup from Schoharie County.
“This isn’t just a flavored spirit – it’s a tribute to local craftsmanship and terroir,” said head distiller Jamie Terk in a news release. “We took the time to balance this blend to perfection, allowing the apple and maple flavors to shine without overpowering the brandy’s core character. The bold and balanced profile delivers notes of baked apple, caramel, vanilla and hints of toffee, making it a versatile pour for sipping neat or over ice.”
Upstate Brandy Maple made its competitive debut at the SIP Awards where it was honored with a Double Gold Medal, according to the distillery.
