There was a time when the Aviation was almost a ghost — a name in century-old bar manuals and faded photographs from the early days of the American cocktail. Its pale blue hue and perfumed aroma belonged to another era, and the drink vanished long before most of us ever sat at a bar. Then came the revival. Some embraced it as a rediscovered jewel; others saw it as a curiosity best left in the archives. Either way, the Aviation became something you had to have an opinion on, and it’s never stopped dividing drinkers since.
Joining us to explore this elegant, yet divisive blend of gin, lemon, Maraschino, and crème de violette is Frank Caiafa, who returns for his third “Cocktail College” appearance armed with decades of bartending insight. 2 ounces London Dry gin, ideally 47 percent ABV
¾ ounce lemon juice
½ ounce Luxardo Maraschino Liqueur
¼ ounce crème de violette, such as Rothman & Winter
Garnish: cherry, lemon twist, or orange twist
Add all ingredients to a cocktail shaker with ice.
Shake until well chilled then fine strain into a chilled Nick & Nora glass.
Garnish with a cherry, lemon twist, or orange twist.
