Clonakilty Single Pot Still Irish Whiskey

Clonakilty Distillery, a maritime distillery on Ireland’s southwestern coast, has announced the launch of its Single Pot Still Irish Whiskey.

This release is the first whiskey fully distilled and matured by the distillery.

Made from barley grown on the Scully family farm, located on the edge of the Atlantic Ocean in County Cork, Clonakilty Single Pot Still Irish Whiskey looks to represent its coastal terroir. This maritime influence affects the soil, the distillery says, which is reflected in the barley used in this whiskey.

“We are thrilled to introduce our first Single Pot Still Irish Whiskey,” says Michael Scully, founder of Clonakilty Distillery. “This whiskey is a true reflection of our dedication to our craft, our commitment to quality, and our deep connection to the land and sea that surrounds us. It’s a spirit that tells the story of our origins, with a complexity and depth that is of unparalleled quality.”

Triple distilled in traditional copper pot stills at Clonakilty’s distillery, the whiskey undergoes an extended fermentation lasting more than 100 hours. The spirit is then matured in a selection of ex-bourbon, Amontillado sherry and Oloroso sherry casks at the distillery’s Atlantic Ocean Warehouse.

This coastal aging process provides a maritime flavor profile, the distillery says.

Following cask maturation, the whiskey is reduced to its bottling strength of 46% ABV over a period of up to two weeks.

On the nose, Clonakilty Single Pot Still Irish Whiskey has aromas of vanilla sweetness, with hints of demerara sugar, citrus peel and kiwi, according to distillery notes. The palate includes creamy vanilla, caramelized pear and crisp apple, leading into a gentle wood spice, dark chocolate and orange zest. The finish contains notes of sea salt and caramel.

“This whiskey is the culmination of years of passion, dedication, and an unwavering pursuit of excellence by our team,” says Oisin Mulcahy, head distiller of Clonakilty Distillery. “Every element from the barley we grow to the final bottling, has been handled with the utmost care and precision. This release is more than a whiskey; it’s a celebration of our heritage, our craft, and the remarkable people who bring it to life. I couldn’t be prouder of what we’ve achieved together.”

Clonakilty Single Pot Still Irish Whiskey has a suggested retail price of $49.99 per 750-ml. bottle. It’s now available for purchase at retailers and through Clonakilty’s online shop.
