1 oz. Passionfruit Purée
¾ oz Mulled Spice Infused Simple Syrup

2 dashes Pimento Bitters
1 oz. of Sparkling Wine

Preparation

To make the simple syrup, steep ¼ cup of mulled spices in with equal parts 125 grams of sugar and 125 grams of water.

To make the cocktail, add all ingredients into a shaker tin, fill the tin with ice and shake.
Strain the cocktail into a coupe, top with sparkling wine, and garnish with a dehydrated orange.

I spent half my life in the UK (where my father is from) and one tradition I remember the most is getting a Christmas orange. Another one of my favorite memories I’ve had is my grandmother’s Gingerbread cookies which I used her recipe for the spiced cranberry syrup. This is truly a combination of my two families and their traditions.

I was inspired by the molasses, cedar and vanilla that come through the rum. All of the flavors and spices immediately made me think of the holidays. Egg nog has always been a holiday favorite that celebrates all of the spices. So, I wanted to do a non-dairy, vanilla spice egg nog that everyone could enjoy.
