For many, this icebox cake serves up an instant hit of summertime nostalgia. It’s cool, creamy, and filled with cookies. Plus, it’s incredibly quick to pull together. Although you can opt to dress it up, the original Famous Icebox Cake—also known as the Famous Refrigerator Roll—consisted of only wafer cookies layered with lightly sweetened vanilla whipped cream or whipped topping that was then left to set in the icebox, or what we now call the refrigerator. Kept in the icebox overnight, the moisture and fat from the cream would be absorbed by the cookies, which would then turn soft and cake-like. It was the ultimate summertime dessert for the busy housewife, requiring no time in the oven and designed to be made the night before.
Although versions of icebox cake existed before the debut of Nabisco’s Famous Chocolate Wafers, it was the company’s back-of-the-box recipe that spread the cake’s popularity across the nation. The wafer cookies were born in 1924 as a product of the National Biscuit Company, which would later take on the name Nabisco. The first chocolate wafer cookies were packaged in a tin alongside ginger and sugar wafers. However, the chocolate wafers were in such high demand that the other flavors were eventually dropped. Nabisco’s Famous Chocolate Wafers were then packaged in their own cardboard packaging with a recipe for icebox cake added to the labeling in the 1940s. The rest, as they say, is history. The enduring popularity of this no-fuss dessert proves that sometimes the simplest ingredients make for the most delicious desserts.
Light and creamy vanilla-scented whipped cream comes together with decadently rich layers of homemade Chocolate Wafers to create this summertime hit. Once constructed, this cake will rival any traditional chocolate cake in both taste and appearance.
