It’s well known that we eat — and drink — with our eyes. No matter how good a cocktail may taste, if it doesn’t look pretty, it’s probably going to have a hard time resonating with the masses. And one of the easiest ways to doll up a drink’s appearance is with a garnish, whether it’s a simple citrus peel, an olive, or something totally out-of-pocket.

Sometimes garnishes double as a snack or a key component of a drink’s aromatic bouquet. Other times, they’re purely cosmetic. As some of these garnishes fly in the face of running a sustainable bar program, some establishments are ditching them altogether. To their credit, not every citrus-forward drink really needs a lemon or lime wedge stuck to its rim, but in the same breath, what’s a Martini without an olive or lemon twist?
