1 ½ oz. No. 3 Gin1 ½ oz. Passion fruit sherbet½ oz. Xtabentun Mayan liqueur½ oz. Lime juice1 Egg white
Build all ingredients in a tin shaker.
Shake without ice to emulsify the egg white.
Add ice and shake again.
Strain into a chilled coupe glass.
