Santa’s Trash Cookies Recipe – Customizable

It’s that time of year! At least for some of us Canadians. The second it hits Nov 1st, its xmas time in this house. We’ve had the privilege of having some contractors working in our house as well so I’ve been using it as an excuse to make cookies to leave for them, that way I don’t eat them all.

This one is fun because you can really make it your own. It has two cups total of mix-ins, so feel free to swap those to whatever you’d like. Peanut butter cups, mint chips, butterscotch (maybe not both), pick a few of your faves with some of the savoury mix ins like the pretzels, chips, salted peanuts etc for a balanced addictive cookie! Sprinkles are also welcome here.

What you need:
makes 18 to 36 cookies depending on how big you make them

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup light brown sugar, packed

2 teaspoons vanilla extract

2 large eggs

3 cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

1 teaspoon sea salt

2 cups mix ins: 1/2 cup each of crushed ruffle potato chips, crushed mini pretzels, both regular and peanut m&ms.

1/4 cup additional of all mix ins, crushed, to top cookies before baking

Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius). Line your baking sheets with parchment,

In a medium bowl mix flour, baking soda, baking powder and salt. Set aside.

Cream together butter and sugars until fluffy.

Beat in eggs and vanilla until light (about 2 minutes).

Mix in the dry ingredients until combined.

Add 2 cups of mix-ins and fold until just combined.

Roll 2-3 Tablespoons (depending on how large you like your cookies) of dough at a time into balls and place them evenly spaced on your prepared cookie sheets. Dot the top of each cookie with remaining mix-ins to showcase all the goodies inside!

Bake in preheated oven for approximately 12 minutes, until cookies are just golden brown around the edges. If you choose to make your cookies smaller, you may need to remove them earlier.

Allow cookies to cool on baking rack for at least 5 minutes before moving them to a cookie rack (or your mouth).
