Meaghan Dorman is considered a pioneer of New York City’s craft cocktail movement — but earning that title wasn’t so straightforward. Her entry point? A Craigslist ad for a mysterious new speakeasy in Chelsea called Raine’s Law Room. That gig would ultimately lead her to open an equally — if not more — celebrated bar a few years later: Dear Irving.
Dear Irving became an instant classic, perfecting the Gibson, setting a new standard for guest experience, and eventually expanding to two more locations, and thus solidifying Dorman’s reputation as one of the city’s great minds in hospitality.
