Hilton has partnered with author, wellness coach and no- and low-alcohol cocktail expert Derek Brown on a beverage program for its Tempo by Hilton brand. Building on the success of the brand’s “Spirited” and “Free-Spirited” cocktail menus, the collaborations offers new drinks that blend functional ingredients, mindful drinking principles and cutting-edge mixology.
Tempo by Hilton’s refreshed menu launched on Jan. 1 at all locations. Highlights include the Sage Against the Machine, a savory twist on a Gin Sour; Pink Grapefruit Club, a bright and citrus-forward cocktail that incorporates a salt tincture to sharpen the fruit’s flavor; and Pear Necessities (shown atop), a bright, bourbon-forward beverage. Each drink is available in both spirited and free-spirited versions, designed to reflect the brand’s ethos of balance, sophistication and modern lifestyle.

Brown, who cofounded the Mindful Drinking Fest and Drink Company with his wife and partner, Maria Bastasch, is a former bartender known for his work at the former Columbia Room in Washington, D.C. — named Best American Cocktail Bar in 2017. He also authored Spirits, Sugar, Water, Bitters: How the Cocktail Conquered the World (2019) and Mindful Mixology: A Comprehensive Guide to No- and Low-Alcohol Cocktails (2022), both recognized for their influence on cocktail and non-alcoholic culture.
Launched in 2023 with the opening of Tempo by Hilton in Times Square, the brand currently operates locations in Nashville, Louisville and Raleigh, with 70 additional properties under development. Tempo by Hilton, which targets “modern achievers” who seek a hotel experience that reflects their ambition, won a BevX award in 2024 for Best Single-Concept Hospitality Beverage Program.
