What I’m Drinking Now: Lexi Parker and the Pink Pony Club

I love the challenge of taking an ingredient that most people only think of as something you eat (not drink) and turning it into the centerpiece of a delicious cocktail. Snap peas are so crisp and refreshing, and they really add such a tasty vegetal note to this drink that tends to take everyone by surprise when they first try it. 

Playing around with utilizing fresh produce in cocktails is always fun because produce changes seasonally, so there’s always something different to try to incorporate into a cocktail, depending on the time of year. This cocktail also uses fresh mint, which plays nicely with the snap peas and really brightens the entire drink up.  

While the snap pea syrup is a little labor intensive, the Pink Pony Club is really not that difficult to make. Its build is most similar to a Margarita, and it definitely drinks like one — super refreshing!

Pink Pony Club

Course Drinks
Keyword guava, lemon, lychee liqueur, pink peppercorns, rose syrup, tequila

Ingredients

1 ¾ oz. Pink peppercorn-infused tequila¾ oz. Rosebud simple syrup1 oz. Guava puree½ oz. Giffard Lichi Li liqueur¾ oz. Lemon3 drops 20% Saline solution

Instructions

Shake all ingredients in cocktail shaker.
Double strain into coup glass.
Garnish with dried rose petals.
