New Summer Cocktails at Pebble Beach Resorts 

Luxury operator Pebble Beach Resorts has teed off a new lineup of seasonal cocktails made with fresh seasonal ingredients from California’s Central Coast. Featuring bright citrus, fresh herbs, Jello shot scallops, tropical fruits and premium spirits, the cocktails, priced at around $20 each, range from bold and adventurous to light and refreshing.

For instance, the Greens In Regulation cocktail, available at The Tap Room, combines Maestro Dobel reposado cristalino tequila, Ancho Reyes Verde liqueur, lime juice, cucumber-celery-jalapeño juice, agave, and pineapple juice, served in a Collins glass with a Tajín rim. The Cloud 9, available at The Inn at Spanish Bay, mixes Hendrick’s Gin, Italicus liqueur, prickly pear purée, sweetened lime juice and mint.

The Sea Glass, offered at Stillwater restaurant, shakes up Grey Goose vodka, orange liqueur, lemon juice, simple syrup and blood orange purée. It’s garnished with a cardamom vanilla tuile — a signature creation at Pebble Beach. (Full recipe below).

Stillwater’s Hugo 75 is a flute of Champagne topped with a Jello scallop made with Bombay Sapphire gin and St. Germain. It’s finished with elderflower foam and garnished with cornflower pieces. And a mocktail called Whale Watcher, priced at $16, uses Ritual non-alcoholic whiskey, peach purée, sweet ginger purée, lemon juice and club soda.

Ingredients

2 oz. Grey Goose vodka½ oz. Preserve orange liqueur1 oz. Lemon juice1 oz. Simple syrup½ oz. Blood orange puréeCardamom vanilla tuile garnish

Instructions

Add all ingredients to a shaker with ice.
Shake and double strain into a chilled coupe glass.
Garnish with a cardamom vanilla tuile (a signature creation at Pebble Beach).
