INGREDIENT BREAKDOWN

From the gelatin that holds the filling firm to the cornstarch that keeps the Ladyfingers tender, here is what every component is actually doing when making this Charlotte Russe.

 

UNFLAVORED POWDERED GELATIN: Gelatin is a protein derived from collagen that, when dissolved in liquid, forms a network of long molecules that trap everything around them, producing a gel that is firm enough to slice cleanly but soft enough to dissolve on the palate. In this recipe, it is bloomed in cold water first, which allows the granules to hydrate fully before being added to the roasted strawberries. The quantity is calibrated for a filling that unmolds cleanly and holds its shape when sliced.

FRESH STRAWBERRIES: Roasting the strawberries concentrates the sugars, drives off excess moisture, and develops a deeper flavor. After roasting, the berries are reduced further on the stovetop, compounding the concentration again.

GRANULATED SUGAR: Sugar appears in multiple places in this recipe, and in each, it is doing something slightly different. In the roasted strawberries, it draws moisture from the berries as they bake, accelerating softening and contributing to the jammy consistency as it reduces. On the stovetop, it provides the sweetness that balances the fruit’s acidity. In the Ladyfingers, the granulated sugar added to the egg whites stabilizes the foam by coating the proteins, slowing their tendency to over-tighten and giving you a glossy, supple meringue rather than a stiff, grainy one.

KOSHER SALT: Salt suppresses bitterness and heightens sweetness—a phenomenon rooted in how salt ions interfere with bitter taste receptors—which means the strawberries taste more vividly and completely like themselves. It also amplifies the perception of the other flavors in the filling, making the lemon juice brighter and the mascarpone more pronounced.

FRESH LEMON JUICE: Lemon juice is added to the compote after roasting rather than before, as prolonged heat would drive off its aromatic compounds. The juice’s purpose is twofold: acidity, which balances the sweetness of the sugar and the richness of the dairy in the finished dessert, and brightness, which keeps the strawberry flavor from tasting flat or one-dimensional after the overnight chill. A tablespoon is enough to lift the flavor without making the filling taste sour.

MASCARPONE CHEESE: Mascarpone is a high-fat Italian fresh cheese made from cream, and it transforms the filling in two ways at once: It adds richness and body that makes the finished cream stable enough to slice, and it introduces a subtle tang that keeps the dessert from tasting cloying. Unlike whipped cream alone, mascarpone holds its structure without weeping, which is particularly important in an assembled dessert that spends a full night in the refrigerator.

CONFECTIONERS’ SUGAR: Confectioners’ sugar dissolves instantly into the mascarpone without any risk of graininess. Its about 3% cornstarch content provides mild stabilization, absorbing free moisture and helping the cream maintain its structure in the finished dessert. It appears in both the mascarpone cream and the Ladyfinger sugar dusting, where its rapid-melt quality forms the thin, glassy crust on the exterior of the cookies.

VANILLA EXTRACT: In the mascarpone cream, vanilla rounds out the dairy richness and adds aromatic depth that keeps the filling from tasting flat. Vanilla’s primary flavor compound, vanillin, is fat-soluble, which means it disperses evenly and thoroughly through the cream rather than sitting in isolated pockets.

COLD HEAVY WHIPPING CREAM: The heavy cream must be cold—ideally straight from the refrigerator—because fat globules coalesce more readily at low temperatures as you whisk, trapping air efficiently and building volume.

UNBLEACHED CAKE FLOUR: Cake flour has a lower protein content (around 7% to 9%) than all-purpose flour, which means less gluten development when the batter is folded together. Less gluten means a more tender, delicate crumb—essential in the Ladyfingers, which must be light enough to dissolve pleasantly against the cream while firm enough to hold their piped shape.

CORNSTARCH: Cornstarch is blended with the cake flour in the Ladyfingers batter to dilute the protein content further, pushing the tenderness and delicacy of the cookies even lower. It also contributes to the faintly crisp outer shell that gives freshly baked Ladyfingers their texture. In practical terms, sifting the two together thoroughly ensures even distribution—pockets of pure cornstarch in the batter would produce gummy spots in the finished cookies.

EGGS: Eggs are the sole leavening agent in the Ladyfingers, providing all the lift through mechanical aeration rather than chemical leavening. The whites and yolks are beaten separately to maximize the foam each can produce. Whites, beaten to stiff peaks, form a stable network of air-trapping proteins. Yolks, beaten with sugar until pale and thick, create a glossy ribbon of emulsified fat and protein that adds richness and color without deflating the white foam when folded in. Room temperature eggs are specified because they whip to greater volume than cold eggs—the proteins are more pliable and trap air more readily when not chilled.

STRAWBERRY PRESERVES: Loose jam or fresh macerated berries would bleed into the cream and compromise both the appearance and the texture of the top layer. Preserves, with their higher pectin content and thicker consistency, stay right where you put them.

BAKING SHEETS: You will need at least two rimmed baking sheets for the ladyfingers: one for the spiral base disk and one (or two, working in batches) for the finger-shaped biscuits. A light-colored pan is preferable—dark pans can over-brown the undersides of the fingers before the tops are dry. Line each with parchment paper, and for the disk, draw your 8-inch circle on the underside of the parchment so the marker doesn’t transfer to the batter. TALL-SIDED 8-INCH ROUND CAKE PAN: A pan with tall, straight sides is important—it supports the plastic wrap lining cleanly and gives the assembled dessert its defined cylindrical shape. The 8-inch diameter also determines the size of the ladyfinger disk you pipe for the base, so consistent sizing between pan and template matters. FINE-MESH SIEVE: The fine-mesh sieve does two things in the Ladyfingers recipe. First, it sifts together the cake flour and cornstarch, breaking up any clumps and ensuring even distribution before the flour is folded into the egg foam—clumps would deflate the batter as you work to break them up. Second, it dusts the piped batter with the confectioners’ and granulated sugar mixture in a light, even layer. Shaking sugar directly from a spoon creates uneven patches; the sieve gives you a fine, consistent layer across every finger and the base disk. SMALL OFFSET SPATULA: Two moments in this recipe require a small offset spatula: spreading the strawberry-mascarpone filling smooth in the mold and spreading the strawberry preserves across the top of the unmolded dessert. SETTING THE CHARLOTTE:

A little gelatin goes a long way.

Powdered gelatin must always bloom first—sprinkled over cold water, not hot. Hot water dissolves it too quickly, preventing the granules from hydrating evenly and often resulting in lumps. Cold water gives the gelatin time to absorb the liquid uniformly. Once bloomed, the gelatin dissolves seamlessly into the hot strawberry mixture on the stove, distributing evenly throughout the filling and giving the charlotte its sliceability.

 

ROASTING THE STRAWBERRIES

Fresh strawberries are mostly water, which is the enemy of a gelatin-set filling. When stirred into cream, they will release moisture and eventually destabilize the filling. Roasting the strawberries solves both problems at once: It drives off a significant amount of water as steam while concentrating the fruit and releasing beautiful, deep, jammy notes. After roasting, the berries and the gelatin go into a saucepan to reduce further. You’re looking for the mixture to cling to a spoon.

THE MASCARPONE METHOD:

Why cold cream matters

Mascarpone is a dense, high-fat cheese, and it needs to be softened before you beat it to ensure it is smooth. But here’s the counterintuitive part: You then add cold heavy cream. Cold cream whips faster and more stable than warm cream because the fat globules stay firm and trap air more efficiently. That fat air matrix is what gives the finished cream its structure.

Adding the cold cream in a slow, steady stream with the mixer on low is essential. Pour it all in at once and the mascarpone will seize into lumps before the cream can incorporate. A steady stream gives the cheese time to loosen gradually, creating a homogeneous base before you increase the speed to whip.

 

THE SCIENCE OF LADYFINGERS

Store-bought ladyfingers work in a pinch, but homemade ones are a revelation—light as clouds, with a delicate, crisp exterior that gives way to a tender, airy crumb.

Cake flour has a lower protein content than all-purpose flour, which limits gluten development and produces a more tender crumb. Cornstarch reinforces that tenderness further by diluting the protein network—the two together create a cookie that is feather-light.

Egg whites are whipped to stiff peaks to create an airy, meringue-like foam. Yolks are beaten separately with sugar until pale and thick. When the two are folded together, the result is a batter with enormous loft baked into it from the start. Flour goes in last, folded in in two additions to distribute it evenly while protecting all that air.

A light dusting of confectioners’ sugar and granulated sugar creates a thin, crackled glaze as the batter bakes—that distinctive, gentle crust that makes a ladyfinger feel like a ladyfinger.

 

THE ASSEMBLAGE

Once the Ladyfingers are made and the filling has set, it’s time to assemble the Charlotte Russe.

Line a tall-sided 8-inch round cake pan generously with plastic wrap with a good 4 inches of overhang all around to help you get it out easily later.

The spiral Ladyfinger round goes in first, pressed flat against the base of the pan. Spoon the strawberry mascarpone filling on top, smooth the surface, and refrigerate overnight.

Grip the overhanging plastic and lift it straight up from the pan. Peel the plastic away slowly and place onto your serving platter. Spread the strawberry preserves on top.

Trim 1/8 inch from the base of each small Ladyfinger. This creates a flat edge that sits flush against the bottom of the dessert, closing the gap between cookie and platter and keeping the cookie upright and even. Press each one in gently but firmly and keep them close together.

Spread the reserved mascarpone cream on top and then crown with fresh berries.

Charlotte Russe

Makes 6 to 8 servings

Ingredients

2 tablespoons (30 grams) cold water1 teaspoon unflavored powdered gelatin2 pounds (907 grams) fresh strawberries, trimmed and quartered1 cup (200 grams) granulated sugar, divided¼ teaspoon kosher salt1 tablespoon (15 grams) fresh lemon juice2 cups (454 grams) mascarpone cheese, softened½ cup (60 grams) confectioners’ sugar½ teaspoon vanilla extract cups (600 grams) cold heavy whipping creamLadyfingers (recipe follows) cup (107 grams) strawberry preserves*Garnish: fresh strawberries

Instructions

In a small bowl, place 2 tablespoons (30 grams) cold water; sprinkle gelatin on top.
Preheat oven to 375°F (190°C).
In a 13×9-inch baking pan, stir together quartered strawberries, ¼ cup (50 grams) granulated sugar, and salt until well combined.
Bake, stirring every 10 minutes, until berries are very fork-tender and fragrant and have released ample juices, about 40 minutes.
Using a rubber spatula, immediately transfer strawberries and juices to a medium saucepan. Stir in gelatin mixture, lemon juice, and remaining ¾ cup (150 grams) granulated sugar. Cook over medium heat, stirring frequently, until thickened and reduced to about 1⅓ cups (about 419 grams) and mixture clings well to a spoon, 15 to 25 minutes. Remove from heat, and let cool completely at room temperature, stirring occasionally to keep gelatin from soft-setting.
Line a tall-sided 8-inch round cake pan with a few sheets of plastic wrap, letting excess extend over sides of pan.
In the bowl of a stand mixer fitted with the paddle attachment, beat mascarpone, confectioners’ sugar, and vanilla at low speed until creamy and combined, about 1 minute. With mixer on low speed, add cold cream in a slow, steady stream, beating until well combined and stopping to scrape bottom and sides of bowl. Increase mixer speed to medium-high, and beat until stiff peaks form, 3 to 5 minutes. Reserve 1½ cups (about 285 grams) mascarpone mixture in a small bowl, cover, and refrigerate until ready to use. Gently fold mixture cooled strawberry mixture into remaining mascarpone mixture until well combined.
In bottom of prepared pan, place 8-inch round Ladyfinger. Top with strawberry mixture. Tap pan on a kitchen towel-lined counter 2 to 3 times to ensure there are no gaps, and spread smooth with a small offset spatula. Cover with excess plastic wrap, and refrigerate for 8 hours or up to overnight.
When ready to serve, carefully unwrap and remove dessert from pan, and place on desired serving platter. Top with preserves, spreading smooth with a small offset spatula.
Trim 1/8 inch off one short side of each remaining Ladyfinger, and arrange Ladyfingers, cut side down and flat side toward dessert, around sides of dessert. Top dessert with reserved 1½ cups (285 grams) mascarpone mixture. Garnish with strawberries, if desired.

Ladyfingers

Makes 1 (8-inch) cookie and about 32 (3×1-inch) cookies

Ingredients

2/3 cup (84 grams) unbleached cake flour tablespoons (20 grams) cornstarch4 large eggs (200 grams), separated and room temperature½ cup (100 grams) plus2 tablespoons (24 grams) granulated sugar, divided½ teaspoon vanilla extract2 tablespoons (14 grams) confectioners’ sugar

Instructions

Position oven racks in top third and bottom third of oven. Preheat oven to 375°F (190°C). Line 2 baking sheets with parchment paper. Using a permanent marker and an 8-inch round cake pan as a guide, draw a circle on another sheet of parchment paper. Turn parchment over, and place on another baking sheet.
In a small bowl, sift together flour and cornstarch.
In the bowl of a stand mixer fitted with the whisk attachment, beat egg whites at medium speed until foamy, about 30 seconds. With mixer on medium speed, add ¼ cup (50 grams) granulated sugar in a slow, steady stream; increase mixer speed to medium-high, and beat until stiff peaks form, 3 to 5 minutes. Transfer to a medium bowl.
Clean bowl of stand mixer and whisk attachment. Using the whisk attachment, beat egg yolks and ¼ cup (50 grams) granulated sugar at medium-high speed until pale yellow and thick, 2 to 3 minutes. Using a balloon whisk, fold in half of egg white mixture and vanilla just until combined; fold in remaining egg white mixture. Fold in sifted flour mixture in two additions just until combined.
Working in batches if necessary, transfer batter to a large pastry bag fitted with a 7/16-inch round piping tip (Ateco #805). Starting at center of drawn circle, pipe batter in a continuous spiral, ensuring there are no gaps, until batter is ¼ inch from edges of drawn template. On remaining prepared pans, pipe 3-inch long lines of batter at least 1 inch apart.
In another small bowl, whisk together confectioners’ sugar and remaining 2 tablespoons (24 grams) granulated sugar. Using a fine-mesh sieve, lightly sift sugar mixture onto piped batter.
Bake for 5 minutes. Rotate pans, and switch between racks; bake until golden brown and dry, 3 to 4 minutes more. Let cool completely on pans. Gently remove from pans using a small offset spatula. Store in an airtight container until ready to use. Best used within 24 hours.
