Easy Grilled Baby Potatoes in Foil

When I say these grilled potatoes are easy, I mean EASY! No par-boiling, hardly any chopping, just wrap them up, plop the grilled potato packs on the grill, and cook. Grilled potatoes in foil are tender and garlicky, with subtly golden edges and fluffy insides. Obsessed!

The Story Behind the Recipe

I’ve always loved a good foil pack recipe. I’ve been developing a recipe for sausage/veggie sausage, potatoes, and veggies in foil for years now – basically every time we go camping and there’s a campfire, I’m trying a new version. But they haven’t come out quite right yet, and I realized part of the reason is that I was overcomplicating the recipe.

While I still have those full-meal-deal foil packets on my recipe development list, I decided that something that would be really nice to have in my back pocket (or on my grill, or in my campfire) was a super simple side dish, something that could go along with hot dogs/veggie dogs, hamburgers/veggie burgers, basically a myriad of good grilled foods. So I scaled my foil packet situation way back and focused on the potatoes.

Immediately, I was in love. These grilled potatoes in foil are about as easy as it gets. Because we use baby potatoes, there is no need to parboil the potatoes to get them to cook all the way through. Less steps = excellence!

Mostly I love how they get a little crispy on the outside + tender and fluffy inside. With basic seasonings – garlic powder, paprika, salt, and pepper, and a little olive oil to help crisp them up and bring it all together – these potatoes are in danger of stealing the main-dish spotlight. They’re so simple but so very good!

Why You’ll Love Grilled Potatoes in Foil

Perfect easy side dish – These Easy Grilled Baby Potatoes in Foil are the easiest summer grilling side dish (though honestly I’ll probably be making them in the oven this winter too!)

Prep ahead – Make your foil packs ahead of time and plop them in the ice chest for your camping trop or when you’re getting ready to grill for a crowd. Just a few minutes of prep-ahead time and your no-fuss, hearty side dish is ready to go.

But they’re also easy to prep right before cooking – Just wash your potatoes, cut the larger ones in half, toss, wrap in foil, and cook!

Grilled Potato in Foil Recipe Ingredients

Baby potatoes – I like to use baby red or baby yellow/Yukon Golds. Give them a quick scrub and cut the large ones in half. Two pounds of them. Done.

Olive oil – To help keep them moist and fluffy inside, develop a bit of caramelized golden brown goodness outside, and to help the garlic powder, paprika, salt and pepper cling to every bit of potato. Yes, you can use butter if you like (and if you’re not worried about keeping this one vegan). I suggest melting it beforehand. But I find it’s not necessary.

Garlic powder, paprika, salt, and pepper – Simple seasonings with a lot of oomph.

Parsley – Optional, but I like to add it to the finished product for a touch of pretty color and herby flavor.

How to Make Them

Toss the potatoes with the olive oil and seasonings.

Divide the potato mix between four pieces of foil.

Fold the foil together and seal well.

Grill, flipping occasionally, until tender.

Sprinkle with parsley and enjoy!

Tip for Success

Cut larger potatoes in half. You want all of the potatoes to be roughly the same size so they cook evenly. Use the smaller potatoes in your bunch as your guide. Or, if your potatoes are more than 1.5″ diameter or so, cut them all in half.

I hope you love this super simple side dish as much as we do! I’m already obsessed with potatoes in their many forms as a side dish but when it comes to easiness, grilling potatoes in foil takes the cake!

Grilled Potato Foil Packs

Ingredients

2 pounds baby red or baby Yukon gold potatoes washed and cut in half2 tablespoons extra virgin olive oil1 teaspoon garlic powder1/2 teaspoon paprika1 teaspoon kosher salt1/4 teaspoon freshly ground black pepper2 tablespoons fresh parsley minced; optional

Instructions

In a large bowl, toss the potatoes with the olive oil, garlic powder, paprika, salt, and pepper.
Lay out four large pieces of foil.
Divide the potato mix between the pieces of foil. Fold the foil together and seal well. I fold the foil into thirds around the potatoes then fold up the sides.
Preheat the grill on medium-high, to about 400°F. Cook until tender, flipping over approx. every 5 minutes, for about 20 minutes.
Carefully open one of the foil packs and use a fork one to determine if the potato is cooked all of the way through – it should easily pierce the potato all of the way through. If the potato is done, remove packs from the grill. If they’re not quite there, fold it back up and cook for another 5 minutes and check again; they should be good to go.
Remove from grill, open packet, sprinkle with parsley if using, and serve.
