½ cup (100 grams) granulated sugar, plus more for topping½ cup (120 grams) whole milk½ cup (120 grams) heavy whipping cream¼ cup (60 grams) canned pumpkin3 large egg yolks (56 grams)1½ teaspoons (3 grams) pumpkin pie spice1 teaspoon vanilla extract¼ teaspoon kosher salt
Preheat oven to 350°F (180°C).
In a medium saucepan, stir together sugar, milk, and cream. Heat over medium-high heat, stirring occasionally, until sugar dissolves and bubbles begin to form around sides of pan, 4 to 5 minutes. (Do not boil.)
In a medium bowl, whisk together pumpkin, egg yolks, pie spice, vanilla, and salt. Gradually add hot sugar mixture, about ¼ cup at a time, whisking until well combined. Pour mixture through a fine-mesh sieve into a large liquid-measuring cup. Divide mixture between 2 (6-ounce) ramekins. Place ramekins in a 9-inch square baking pan, and pour hot water (124°F/51°C) into pan until it reaches halfway up sides of ramekins. Cover pan with foil.
Bake until custard is set around sides but wobbly in center when shaken and an instant-read thermometer inserted in center registers 180°F (82°C) (see Note), 45 to 50 minutes. Immediately remove ramekins from baking pan, and let cool completely on a wire rack, about 1 hour. Cover with plastic wrap, and refrigerate for at least 4 hours or up to overnight.
When ready to serve, sprinkle sugar evenly on top of each serving. Using a handheld kitchen torch, carefully brown sugar until deep golden brown. Serve immediately.
Note: The temperature for this crème brûlée recipe is very important. If the internal temperature is even one degree below 180°F (82°C), it will not set up properly.
