This sauce is a must when I make Cheese Blintzes. It’s just a given that when Mom makes the cheese blintzes, this strawberry sauce will be going on top. No ifs, ands or buts!! If by chance there happens to be any left, we usually put it on top of our ice cream. I especially like it on top of my coffee ice cream. YUM!
It’s so super easy and simple. Just remember to watch the pan as it boils as it can tend to boil up and quite possibly over, and I would hate for you to have to clean that mess up.
You only need three simple things to make this strawberry topping:
Frozen strawberries (16 ounces), thawed
Granulated sugar
Water
If you want, you can add a little lemon juice or zest to enhance the flavor.
This delicious strawberry sauce could not be easier to make! Here’s how to do it:
First, combine the strawberries, sugar, and water in a medium saucepan. Heat over medium-high until the sugar water begins to boil.
Reduce to medium-low heat and simmer for 15 minutes, stirring occasionally with a wooden spoon or silicone spatula.
About halfway through the cooking time, use a potato masher to mash the strawberries. Alternatively, you could smash the thawed strawberries up a bit before placing them in the pan.
Once the strawberries have cooked down, remove the sauce from heat and transfer to a serving bowl. You can serve this strawberry sauce warm or cold.

Yes, you absolutely can use fresh strawberries. I definitely recommend this during strawberry season when they are a bit more affordable. Wash them and remove the stems before using them for this 3 Ingredient Strawberry Sauce.
If you want more of a thick sauce, you can add a cornstarch slurry to the sauce as it simmers.
You can put it in a blender or use an immersion blender to blend out any chunks in your sauce.
Strawberry sauce can be made up to two days in advance for the best results. Keep it covered tightly in the fridge until you are ready to serve it.
Yes, if you are feeding a crowd, this strawberry recipe doubles easily. I also like to use half now and freeze the other half for later!
