The Nothing Beets A Mule from Foundation Social Eatery in Alpharetta, GA, is a savory, spicy take on the familiar Mule, using a beet shrub that gives the drink a vibrant bright pink color. This cocktail was born out of a necessity to use up the beet shrub, which was originally for a different cocktail and also use a spirit that had been on the shelf for quite a while.

“This drink came about to utilize a product I had sitting around since we stopped our brunch service: green chile vodka,” says partner and general manager Nick Hassiotis, who oversees the Foundation Social Eatery bar program and created the cocktail. “It’s great in a Bloody Mary, and we had a few bottles still hanging around.”

Hassiotis thought that that the earthy quality of the beet shrub would go well with the vegetal notes in the green chile vodka. What’s more, he says, “A Mule is a familiar cocktail that allows guests to feel more at ease going outside their comfort zone since they already know the format and what it will, more or less, taste like.”
