With tequila sales rising, Chicago-based Chef John des Rosiers, a 30-year veteran of the on-premise industry, has launched Cambio Tequila.
This new brand explores the possibilities of barrel finishing respective to flavor and character.
Cambio is partnered with ZB Distillery (NOM 1605) and uses a 10-step process to produce its flagship Blanco and Reposado expressions, the company says.
During aging, a variety of barrel types are used to finish the tequila.
Additive-free, Cambio Tequilas are available at cambiotequila.com and in select retail locations in CA, FL, IL, NY and TX for the suggested retail price of $49.99 (Blanco) and $59.99 (Reposado) per 750-ml. bottle.
