“While a classic Daiquiri is made from just three ingredients — rum, lime, and sugar — a proper one requires a bit of care in order to execute just right,” says Drew Pompa, operations director at Takoi, an urban farm-to-table and contemporary Thai restaurant in Detroit.
Takoi is serving its take on the Daiquiri — the Just Right —during July’s Passionfruit series, a seasonal event series in which the restaurant offers cocktails and music for a cause with a portion of drink sales going to benefit a supporting partner each month. The drink name takes inspiration from Drew’s love and admiration for this classic cocktail; a drink that he’s known for ordering at his favorite drinking establishments upon arriving in his seat.
The Only Way draws from the framework of the original Daiquiri while incorporating classic flavors of banana and pineapple through the use of modern techniques. A combination of Appleton Estate Signature and Appleton Estate 8-Year Reserve rums are blended with over-ripe bananas, then processed through a centrifuge to create a clean, clarified banana rum.
The pineapple is applied by juicing a fresh pineapple then clarifying and brix measuring it into a syrup. Fresh lime juice is added, followed by two drops of organic allspice extract— a spice often found in classic rum cocktails — and two drops of saline solutions to help marry all of the ingredients together.
The result is a tropical, fruity, and well-attenuated spin on the original Daiquiri that showcases classic and complementing flavors, Pompa says. “It is a most ideal cocktail for sipping — or chugging three or four — on national Daiquiri day, or any day that warrants a proper drink.”
