Hilton, Paul McGee, Developing Papaya Club For Conrad Orlando

Hotel giant Hilton is partnering with mixologist Paul McGee on Papaya Club, an all-day tropical cocktail experience at the new Conrad Orlando. McGee, who has opened some of the country’s most highly acclaimed bars, will work with Hilton’s global food and beverage team to develop an upscale cocktail program for hotel guests and visitors.

The immersive beverage menu will include tropical flavors such as fresh pineapple, coconut, guava, and papaya, along with several inspired low- and no-ABV drinks, all served in custom ceramic pieces or pineapple and coconut shells. The food menu will include a pu-pu platter, as well as pork skewers, shrimp and scallop siu mai and crab wontons.

The Polynesian-inspired bar decor will complement Papaya Club’s waterside location on Evermore Bay. In addition to Papaya Club, guests at Conrad Orlando, which is scheduled to open in late 2023, will enjoy four dining options, including a signature rooftop Mexican restaurant.

McGee previously helmed the cocktail programs at Chicago Athletic Association’s Milk Room, Cherry Circle Room and Game Room and was an owner at the award-winning Tiki bar Lost Lake. Conrad Orlando is his first hotel project.
