This episode of The Buildout is brought to you by Farmer’s Gin. Whether you are building a bar, you currently are operating a bar, or you just run a bar at home, you need to have a Martini on your menu — and that Martini deserves Farmer’s Gin. Farmer’s Gin is created by the same amazing people who created Michter’s Bourbon. Every single bar deserves a great gin, and Farmer’s Gin is perfect for creating all of the classic gin cocktails. Farmer’s Gin is made in Idaho at the first organic distillery in the United States. It’s made using Regenerative Organic Certified grain that’s grown on a family farm. The regenerative approach they use supports soil health, biodiversity, and also just creates a really delicious gin. You can learn more by following Farmer’s Gin on their socials — @FarmersGin — or heading to farmersgin.com to learn more.
Bartender Jeff Bell may be best known for taking over Please Don’t Tell from its former owners 12 years after the bar opened. By then, it was already well acclaimed in New York City’s elite craft cocktail scene, but Jeff wanted to build something from the ground up himself, and he’s done just that with Kees. Kees, which opened in Manhattan’s West Village in February, is a deeply personal project for Jeff. Not only did he build it out entirely on his own, he did so while the cocktail world waited with bated breath to see how his new venture would shape up against his first spot.
On this episode of “The Buildout,” Jeff joins Adam to talk about his second act, the pressure of opening a new bar when your name is already tied to an iconic one, and the intentionality he brought to building Kees from scratch.
