This week’s meal plan is all about easy dinners with big flavor and minimal cleanup. You’ve got juicy baked chicken thighs, creamy chicken Caesar pasta, tender Mongolian beef, sweet and savory air fryer salmon, and cheesy one-pan cheeseburger rice to finish out the week.
These dinners are easy, family-friendly, and full of flavor. Most are complete meals on their own, but you can always round things out with a simple side like garlic Brussels sprouts or 1-hour dinner rolls.
Monday: Baked Chicken Thighs
Tuesday: One Pan Chicken Caesar Pasta
Wednesday: Slow Cooker Mongolian Beef
Thursday: Brown Sugar Garlic Air Fryer Salmon
Friday: One Pan Cheeseburger Rice

I only meal plan Monday-Friday because we sometimes have things going on over the weekend, or I have leftovers that we can have to finish off the week! If you do have leftovers, make sure to store them properly in an airtight container in your fridge.
