Behind the Beverage: the Ahura Mazda at Roya

Like the food menu, each cocktail at Roya in Austin, TX, draws inspiration from Chef Amir Hajimaleki’s Iranian heritage, using ingredients that transport guests through Persian flavors. The Ahura Mazda is one of the more personal cocktails on the menu, inspired by one of Amir’s childhood memories growing up in Iran.

The cocktail was created by Chef Amir himself and is inspired by one of his childhood memories growing up in Iran. An elderly neighbor in his family’s apartment building would regularly make fresh carrot juice, and the drink serves as a nostalgic nod to recreate that familiar flavor. Its name, Ahura Mazda, translates to “Lord of Wisdom” (or “God of Wisdom”), and Chef Amir likes to joke that after a couple of cocktails, everyone gains a little wisdom.

Ahura Mazda

Course Drinks
Keyword carrot juice, honey, lemon, mezcal, tumeric

Ingredients

1 ½ oz. Los Javis mezcal1 oz. Carrot juice½ oz. Honey turmeric syrup½ oz. Lemon juice

Instructions

Add all ingredients to a cocktail shaker filled with ice.
Shake for 10 to 15 seconds.
Double-strain into a Nick & Nora glass.
Garnish with a dehydrated lemon.
