Every component of cannoli, from their crackling shells to their creamy filling, depends on the interactions between the ingredients. Understanding what each one does helps you troubleshoot as you work and make deliberate decisions that affect the final result.
ALL-PURPOSE FLOUR: All-purpose flour provides the structural backbone of the shell. Its moderate protein content (around 10% to 12%) builds gluten when the dough is kneaded, giving the shell strength to hold its shape around the tube and withstand frying without falling apart. Sufficient gluten development is also what allows you to roll the dough very thin without it tearing.
GRANULATED SUGAR: A small amount of sugar encourages browning during frying through the Maillard reaction, helping the shell develop its deep golden color. It also subtly tenderizes the dough by competing with the proteins for available water, slightly limiting gluten development and producing a shell that shatters cleanly when bitten.
KOSHER SALT: Salt enhances flavor throughout the recipe, but in the dough, it plays a structural role as well. It strengthens the gluten network by tightening protein bonds, contributing to a dough that rolls smoothly without tearing and holds its seam securely during frying. As for the filling, salt draws out residual moisture from the ricotta and amplifies flavor across the entire mixture. It balances the sweetness of the confectioners’ sugar and brings forward the dairy notes of both the ricotta and mascarpone, making the filling taste brighter and more complex.
UNSALTED BUTTER: Butter shortens gluten strands by coating some of the flour proteins, limiting their ability to bond and form long, tough networks. Worked in at room temperature, it distributes evenly through the dough, contributing to a more tender, flakier shell rather than a chewy or bready one.
EGG: The yolk goes into the dough, adding richness and helping emulsify the fat and water for a more cohesive, workable texture. The white is reserved as the glue: Dabbed onto the overlapping edge of each dough circle before it is wrapped around the tube, the egg white seals the seam firmly so it holds through the heat and turbulence of frying.
DRY WHITE WINE: Wine is the traditional liquid in cannoli dough, and it serves a specific technical purpose. Unlike water, alcohol does not combine with flour proteins to form gluten, so using wine as the hydrating liquid keeps the dough pliable and easy to roll thin without becoming tough. Alcohol also evaporates faster than water in hot oil, which drives rapid steam formation just beneath the surface of the shell, producing the signature blistered, bubbly crust.
WHOLE-MILK RICOTTA CHEESE: Ricotta is the foundation of the filling. Its mild, milky sweetness and delicate texture define classic cannoli. Whole-milk ricotta offers the best fat content for a creamy, stable filling, but it also carries significant moisture that must be removed before use. Without overnight draining through a fine-mesh sieve, the excess whey will loosen the filling and cause it to seep into the shell, compromising the crunch you worked to achieve.
CONFECTIONERS’ SUGAR: Confectioners’ sugar dissolves instantly into the ricotta during processing, with no risk of graininess. Its approximately 3% cornstarch content acts as a mild stabilizer, absorbing free moisture and helping the filling hold its shape after piping. The quantity is intentionally given as a range (1/2 to 3/4 cup) to account for natural variation in sweetness and moisture between batches of ricotta.
ORANGE ZEST: Orange zest is a classic flavoring for cannoli. The zest holds the fruit’s essential oils in concentrated form, contributing floral, citrus brightness that cuts through the richness of the dairy filling. Processing the zest directly with the ricotta ensures the oils distribute evenly throughout rather than remaining in isolated pockets.
MASCARPONE CHEESE: Mascarpone is a thick, high-fat Italian fresh cheese made from cream, and it transforms the filling from good to exceptional. Folded into the processed ricotta by hand, it adds a silky richness and body that makes the filling pipe cleanly and hold its shape inside the shell.

PASTA ROLLER: Cannoli dough needs to be rolled to about 1/16 inch for shells that fry up crisp and light rather than doughy. SILICONE SPATULAS: Folding mascarpone into the ricotta base requires a light hand and a flexible blade. A silicone spatula lets you work through the mixture in long, sweeping strokes without deflating the filling or overmixing, both of which can cause the mascarpone to break and turn grainy. Unlike water, which fully hydrates flour proteins, alcohol only partially hydrates them. This limits gluten development, keeping the dough extensible but not elastic—ideal for rolling thin without springing back. During frying, alcohol evaporates more quickly than water. That rapid evaporation creates steam pockets, which form the characteristic blisters on the shell’s surface. The wine isn’t there for flavor alone— it’s essential to create cannoli’s signature structure.
When the shells hit 350°F (180°C) oil, moisture in the dough rapidly converts to steam. That steam pushes outward, forming the characteristic bubbles on the surface. Meanwhile, starches gelatinize and proteins set, creating a rigid, glassy structure as moisture escapes. The faster this happens, the crisper the shell. That’s why steady oil temperature matters. If the oil temperature drops, the structure forms more slowly, allowing excess fat to be absorbed before the crust sets.
The filling presents the opposite challenge. Ricotta contains whey—free water that will be absorbed into the shell if left unchecked. Draining overnight reduces this moisture, slowing the absorption and preserving crispness. Confectioners’ sugar contains a small percentage of starch, which also absorbs some moisture from the ricotta, subtly stabilizing the filling and preventing it from becoming loose. The smaller particle size of confectioners’ sugar also dissolves more readily, creating a smoother mouthfeel without graininess.
Once filled, the clock starts. Moisture will always move from the creamy interior to the dry shell. Filling at the last moment isn’t just traditional—it’s physics.
